Yannick Cadiou was born into a family of farmers, which greatly influenced his philosophy and formed his idea of agriculture by the 70s. However, after training in agronomy and enology, he spent thirty years as a vineyard manager and vineyard director at two large wine producers. This allowed him to gain autonomy as well as to grasp the opportunity to experiment with many techniques that still have meaning for him today. Gathering nearly 2 hectares, domaine Yannick Cadiou began its journey in 2017 by acquiring 50 ares in Petit Chablis, then by renting one hectare in Chablis, and eventually renting 50 ares in Chablis Côte d’Or.
Sustainable viticulture seems evident to him, but he uses discernment and sound judgment, staying away from any dogma or ideology. He uses copper and sulfur when needed, in homeopathic proportions. With yields around 35 hl/ha, he works on his own in his vines, allowing particular attention.
